With Cinco de Mayo coming up in a week-ish, at work we have been discussing different dishes for the holiday.. with prompting emails from Betty Crocker, Taste of Home, Skip to My Lou, Celebrations at Home, and on, and on some more.  Which led my coworkers and I, to a recipe on how to make your own fried ice cream.  Now it is simple enough, yet I brought up the fact, it would be more cost efficient and easier to just visit  your favorite Mexican restaurant and order the ice cream.  Welllllll that was Monday, it is now Thursday... and I am still thinking about fried ice cream.  So tonight I remedied my problem.

Calories don't count when you are happy, and trust me I was ecstatic.
